30-Minute Lemon Garlic Shrimp and Rice

1 lb (450g) shrimp, peeled and deveined

1 cup jasmine rice

2 cups chicken or vegetable broth

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon red pepper flakes (optional)

1 teaspoon paprika

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Rice: In a medium saucepan, bring the broth to a boil. Add the jasmine rice, stir, reduce heat to low, cover, and simmer for about 15 minutes or until all liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes, then fluff with a fork.

    Sauté the Shrimp: While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

      Cook the Garlic: Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant but not browned.

        Add Shrimp: Add the shrimp to the skillet, season with paprika, red pepper flakes (if using), oregano, salt, and pepper. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes until fully cooked.

          Lemon Flavor: Once the shrimp are cooked, add the lemon zest and lemon juice to the skillet. Stir to coat the shrimp in the lemony sauce and remove from heat.

            Combine: Serve the lemon garlic shrimp over a bed of fluffy jasmine rice. Drizzle any remaining sauce from the skillet over the top.
