8 oz fettuccine or spaghetti

1 lb large shrimp, peeled and deveined

4 tablespoons olive oil, divided

4 cloves garlic, minced

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese (optional)

Lemon wedges, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente (usually about 8-10 minutes). Reserve 1/2 cup of the pasta water and then drain the pasta.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer and season with salt and pepper. Cook for 2-3 minutes, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Build the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant (be careful not to burn the garlic).

        Combine Ingredients: Add the cooked shrimp back into the skillet along with the lemon zest and lemon juice. Stir well to coat the shrimp in the sauce. If the sauce seems too dry, gradually add the reserved pasta water until the desired consistency is achieved.

          Mix with Pasta: Add the drained pasta directly into the skillet with the shrimp and sauce. Toss everything together over medium heat for 1-2 minutes to combine and heat through. Taste and adjust seasoning with additional salt and pepper if needed.
