2 large eggs

1 ripe avocado, halved and pitted

2 whole wheat or spinach tortillas

1/2 cup fresh spinach leaves, chopped

1/4 cup cherry tomatoes, diced

1/4 cup shredded cheese (cheddar or feta work well)

1 tablespoon olive oil or butter

Salt and pepper to taste

Salsa or hot sauce (optional, for serving)

Prepare the Avocado: Scoop the flesh of the avocado into a bowl and mash it slightly with a fork, leaving some texture. Add a pinch of salt and pepper to taste and set aside.

    Cook the Eggs: In a medium-sized skillet, heat olive oil or butter over medium heat. Crack the eggs into the skillet and season with salt and pepper. Scramble the eggs, cooking for about 3-4 minutes until they are fully cooked but still moist. If you like your eggs cheesier, add the shredded cheese to the skillet in the last minute of cooking and let it melt.

      Warm the Tortillas: In a separate skillet or on a griddle, lightly warm the tortillas for about 30 seconds on each side until pliable. This step helps prevent them from tearing when you wrap.

        Assemble the Wraps: On each warm tortilla, spread half of the mashed avocado. Top with scrambled eggs and distribute the fresh spinach and diced tomatoes evenly over the eggs.

          Wrap It Up: Starting from one side, carefully fold the tortilla over the filling, then fold in the sides and roll tightly to form a wrap. Repeat with the second tortilla.

            Serve: Slice each wrap in half and serve immediately with salsa or hot sauce on the side for an extra kick, if desired.
