Ingredients

6 bone-in, skin-on chicken thighs

1 cup of your favorite BBQ sauce (homemade or store-bought)

2 large sweet potatoes, peeled and cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Chicken: In a large bowl, mix the BBQ sauce with smoked paprika, garlic powder, onion powder, thyme, salt, and pepper. Add the chicken thighs to the bowl, ensuring they are well-coated with the sauce.

Prepare the Sweet Potatoes: In another bowl, toss the sweet potato cubes with olive oil, salt, pepper, and a sprinkle of smoked paprika to enhance the flavor.

Arrange on Baking Sheet: Place the coated chicken thighs skin-side up on one half of the prepared baking sheet. On the other half, spread the seasoned sweet potatoes evenly.

Bake: Bake in the preheated oven for about 30-35 minutes, until the chicken thighs are cooked through (internal temperature should reach 165°F or 75°C) and the sweet potatoes are fork-tender. For an extra crispy skin, you can broil the chicken for an additional 2-3 minutes after baking.

Serve: Once done, remove from the oven and let rest for 5 minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve the baked BBQ chicken thighs with the sweet potatoes on the side for a flavorful, hearty meal!
