Baked Brie with Apples

1 round (8 oz) wheel of Brie cheese

1 large apple (such as Granny Smith or Honeycrisp), thinly sliced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons honey

1 tablespoon unsalted butter

1 teaspoon vanilla extract

1 sheet of puff pastry (thawed if frozen)

Fresh rosemary or thyme sprigs for garnish

Sea salt (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface, ensuring it’s large enough to wrap around the Brie wheel. If using a thawed frozen sheet, simply unfold it.

      Make the Apple Filling: In a medium mixing bowl, combine the thinly sliced apples, brown sugar, cinnamon, chopped walnuts (if using), honey, butter, and vanilla extract. Stir until the apples are well coated.

        Prepare the Brie: Place the Brie cheese in the center of the puff pastry. Spoon the apple mixture generously on top of the Brie.

          Wrap the Brie: Fold the edges of the puff pastry over the Brie and apple mixture, pinching the seams to seal. If desired, you can trim any excess pastry or create decorative cutouts with the leftover dough.

            Bake: Transfer the wrapped Brie to a baking sheet lined with parchment paper. Brush the puff pastry with an egg wash (1 egg beaten with a splash of water) for a golden finish. Bake in the preheated oven for about 25-30 minutes or until the pastry is golden brown and crispy.
