Cheesy BBQ Chicken Stuffed Peppers

4 large bell peppers (any color)

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup barbecue sauce (your favorite brand)

1 cup corn (canned or frozen, drained if canned)

1 cup black beans (canned, drained and rinsed)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup shredded cheddar cheese

½ cup cream cheese, softened

Fresh cilantro, chopped (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish, cut side up.

      Mix the Filling: In a large bowl, combine the shredded chicken, barbecue sauce, corn, black beans, garlic powder, onion powder, salt, and pepper. Add the softened cream cheese and ½ cup of cheddar cheese into the mixture. Stir until everything is well combined.

        Stuff the Peppers: Generously spoon the chicken and BBQ mixture into each bell pepper until they are filled to the top.

          Top with Cheese: Sprinkle the remaining ½ cup of cheddar cheese over the stuffed peppers.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove the peppers from the oven, let them cool for a few minutes, and then garnish with fresh cilantro before serving.
