Cheesy Turkey Meatball and Spinach Skillet

1 lb ground turkey

1 cup fresh spinach, chopped

1/2 cup breadcrumbs (Italian-seasoned, if available)

1/4 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese, plus extra for topping

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

2 tbsp olive oil

1 can (15 oz) crushed tomatoes

1 tsp red pepper flakes (optional)

Fresh basil, for garnish

Instructions
 

Prepare the Meatballs: In a large bowl, combine the ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, 1/4 cup mozzarella cheese, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until fully combined.

    Form Meatballs: Using your hands, form the mixture into meatballs about 1 inch in diameter. You should get around 16 meatballs.

      Cook the Meatballs: In a large skillet, heat the olive oil over medium heat. Add the meatballs to the skillet and cook for about 5-7 minutes, turning occasionally, until they are browned on all sides and cooked through.

        Make the Sauce: Once the meatballs are done, carefully remove them from the skillet and set aside. In the same skillet, pour in the crushed tomatoes, stirring to combine. If you like a little heat, add red pepper flakes at this stage. Let the sauce simmer for 2-3 minutes.

          Combine and Simmer: Gently add the meatballs back into the skillet, ensuring they are nestled into the sauce. Cover and let everything simmer for about 5 minutes, allowing the flavors to meld.

            Add Cheese: Sprinkle the remaining mozzarella cheese over the meatballs and sauce, cover, and cook for another 2-3 minutes, until the cheese is melted and bubbly.

              Serve: Remove from heat and garnish with fresh basil. Serve hot over pasta, rice, or enjoy on its own!
