Ingredients

For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably Italian)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Sauce:

1 jar (24 oz) marinara sauce

1 teaspoon red pepper flakes (optional, for heat)

For Assembly:

Sub sandwich rolls (4-6, depending on size)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.

      - Roll the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.

        Cook the Meatballs:

          - Preheat the oven to 400°F (200°C). Bake the meatballs for 20-25 minutes, or until they are cooked through and golden brown.

            Heat the Sauce:

              - While the meatballs are baking, pour the marinara sauce into a medium saucepan. Add red pepper flakes (if using) and heat over medium heat until warmed through.

                Combine Meatballs and Sauce:

                  - Once the meatballs are done, add them to the marinara sauce, gently stirring to coat them evenly.

                    Assemble the Subs:

                      - Slice the sub rolls lengthwise, being careful not to cut all the way through.

                        - Place a few meatballs in each roll, spooning extra sauce over the top. Sprinkle with shredded mozzarella cheese.

                          Melt the Cheese:

                            - Arrange the assembled subs on a baking tray. Place them back in the oven and broil for 2-3 minutes, or until the cheese is melted and bubbly (watch closely to prevent burning).

                              Serve:

                                - Remove from the oven, garnish with fresh basil leaves if desired, and serve hot. Enjoy your cheesy turkey meatball subs with a side of chips or a fresh salad!
