1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

½ cup beef broth (or water)

1 cup shredded cheddar cheese

4 large flour tortillas (10 inches)

½ cup salsa (optional)

Sour cream for serving (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Beef and Aromatics: In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula (approximately 5-7 minutes). Drain any excess fat.

    Add Onions and Garlic: To the cooked beef, add the chopped onion and minced garlic. Sauté for about 2-3 minutes, or until the onion is softened and translucent.

      Season the Mixture: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all the spices uniformly.

        Add Black Beans and Broth: Gently fold in the black beans and pour the beef broth into the skillet. Stir to combine all ingredients and let it simmer for 5 minutes until everything is heated through and the flavors meld. Adjust seasoning if necessary.

          Prepare the Tortillas: Lay a tortilla flat on a clean surface. Add a generous scoop (about 1/4 cup) of the beef and bean mixture to the center of the tortilla. Top with a sprinkle of cheese and a spoonful of salsa if desired.

            Roll the Burrito: Fold in the sides of the tortilla over the filling, then tightly roll from the bottom up, tucking in the sides as you go. Repeat with remaining tortillas and filling.
