2 cups cooked white rice (preferably day-old for best texture)

1 cup cooked chicken breast, diced

2 tablespoons vegetable oil (divided)

1 cup mixed vegetables (such as peas, carrots, and corn)

3 green onions, chopped

2 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

2 large eggs, lightly beaten

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare Ingredients: Ensure the cooked rice is clump-free by breaking it apart with a fork. Dice the cooked chicken breast and chop the vegetables and green onions.

    Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Scramble the Eggs: Pour in the beaten eggs and scramble them until just set. Remove from the skillet and set aside.

        Stir-Fry the Chicken and Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and mixed vegetables, stirring until the vegetables are tender (about 2-3 minutes).
