2 cups cooked chicken, chopped

1 cup frozen peas and carrots mix

1 cup potatoes, diced

1/2 cup celery, diced

1/2 cup onion, diced

1/3 cup butter

1/3 cup all-purpose flour

1 3/4 cups chicken broth

2/3 cup milk

1 teaspoon thyme

1 teaspoon garlic powder

Salt and pepper to taste

1 package refrigerated pie crusts (2 crusts)

1 egg, beaten (for egg wash)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a medium saucepan, boil the diced potatoes until tender, about 10 minutes. Drain and set aside.

      Make the Sauce: In a large skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until they are soft, about 5 minutes. Stir in the flour and cook for an additional minute.

        Add Broth and Milk: Gradually whisk in the chicken broth and milk. Continue to cook, stirring frequently, until the mixture thickens, about 5-7 minutes. Add thyme, garlic powder, salt, and pepper.

          Combine Ingredients: Stir in the cooked chicken, peas and carrots, and the cooked potatoes. Mix well to combine, then remove from heat.

            Prepare the Pie Crust: Roll out one pie crust into a 9-inch pie dish and pour the chicken mixture into the crust. Cover it with the second pie crust, crimping the edges to seal. Cut slits in the top crust for steam to escape.
