1 lb (450g) boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken, seasoned with salt and pepper. Cook for about 6-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the chopped onions and minced garlic. Sauté for about 2-3 minutes, or until the onions are translucent. Add the broccoli florets and cook for an additional 4-5 minutes until slightly tender.

      Make it Creamy: Pour in the chicken broth and bring to a gentle simmer. Reduce the heat to low, and stir in the heavy cream, Italian seasoning, and optional red pepper flakes. Allow it to simmer for another 2-3 minutes.

        Combine Everything: Return the cooked chicken to the skillet and stir to combine. Sprinkle the shredded cheddar cheese over the mixture. Stir gently until the cheese melts and everything is well coated in the creamy sauce.

          Season and Serve: Taste and adjust seasoning with more salt and pepper if needed. Remove from heat, garnish with chopped fresh parsley, and serve hot.
