8 oz. pasta (fettuccine or penne works well)

1 lb. boneless, skinless chicken breast, cut into bite-sized pieces

1 tablespoon olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 ½ cups heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

½ teaspoon red pepper flakes (optional, for a little heat)

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt, pepper, and red pepper flakes (if using). Cook for about 5-7 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Spinach: In the same skillet, lower the heat to medium-low. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
