1 lb boneless, skinless chicken breasts

1 cup wild rice, rinsed and drained

1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1/2 cup frozen peas (optional)

1 tsp dried thyme

1 tsp dried rosemary

1/2 tsp paprika

6 cups chicken broth

1 cup heavy cream

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: In a large pot, heat olive oil over medium heat. Add the chicken breasts and sear for about 5-7 minutes on each side, or until cooked through and golden. Remove from the pot and let cool. Once cooled, shred the chicken using two forks and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until softened. Stir in the minced garlic, thyme, rosemary, and paprika; cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Add the rinsed wild rice to the pot, followed by the chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for about 45 minutes, or until the rice is tender and cooked through.

        Add Chicken and Cream: Once the wild rice is ready, stir in the shredded chicken and heavy cream. If using, add the frozen peas at this stage. Cook for an additional 5-10 minutes, stirring occasionally until everything is heated through.

          Season and Serve: Taste the soup and adjust seasoning with salt and pepper as desired. Ladle the creamy chicken and wild rice soup into bowls and garnish with fresh parsley before serving.
