Creamy Garlic Shrimp and Spinach Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

1 cup fresh spinach leaves, washed

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon butter

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil and butter. Once melted, add the minced garlic and cook for about 1 minute until fragrant. Add the shrimp, and season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until smooth and creamy. If the sauce is too thick, gradually stir in some reserved pasta water until you reach the desired consistency.

        Combine Ingredients: Add the fresh spinach to the sauce and cook for 2-3 minutes until wilted. Return the cooked shrimp to the skillet and stir to coat in the creamy sauce.
