Creamy Tomato Basil Chicken Bake

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 can (14 oz) diced tomatoes, drained

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves, chopped

3 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

1 cup shredded mozzarella cheese

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the cherry tomatoes and cooked them for 3-4 minutes until they start to soften.

        Stir in the drained diced tomatoes, heavy cream, Parmesan cheese, chopped basil, Italian seasoning, salt, and pepper. Allow the mixture to simmer gently for 5-7 minutes until it thickens slightly.

          In a large baking dish, place the chicken breasts in a single layer. Pour the creamy tomato sauce evenly over the chicken.

            Sprinkle the shredded mozzarella cheese on top of the sauce.

              Cover the baking dish with aluminum foil and bake for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 15 minutes or until the chicken is cooked through and the cheese is bubbly and golden.

                  Once finished, remove from the oven and let it rest for a few minutes. Garnish with extra fresh basil leaves if desired before serving.
