1 lb fresh white fish fillets (such as cod, haddock, or pollock)

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 cup breadcrumbs (preferably Panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

Cooking spray or 2 tablespoons olive oil

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
