Crockpot Goulash

1 pound ground beef (or turkey for a lighter option)

1 medium onion, diced

3 cloves garlic, minced

2 bell peppers (red and green), chopped

2 cups elbow macaroni (uncooked)

1 can (15 oz) tomato sauce

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth (or vegetable broth)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

2 teaspoons Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheddar cheese (for serving, optional)

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain any excess fat, then transfer the meat to the Crockpot.

    Sauté Vegetables: In the same skillet, add the diced onion, minced garlic, and chopped bell peppers. Sauté for 3-4 minutes until softened. Then, add to the Crockpot.

      Combine Ingredients: In the Crockpot, add the uncooked elbow macaroni, tomato sauce, diced tomatoes (with their juice), beef broth, tomato paste, Worcestershire sauce, Italian seasoning, paprika, and season with salt and pepper. Stir everything well to combine.

        Slow Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours. Ensure the macaroni is tender and cooked through.

          Serve: Before serving, give the goulash a good stir. If desired, top each serving with shredded cheddar cheese and chopped parsley for a burst of flavor and color. Enjoy!
