Easy BBQ Chicken and Sweet Potato Bowls

1.5 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand or homemade)

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup corn (canned or frozen)

1 cup black beans, drained and rinsed

1 cup fresh spinach or kale, chopped

Optional toppings: sliced green onions, chopped cilantro, avocado, or feta cheese

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken thighs with the BBQ sauce. Ensure each piece is fully coated. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 4 hours for better flavor.

    Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). On a baking sheet, toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread them evenly in a single layer.

      Bake the Sweet Potatoes: Roast the sweet potatoes in the preheated oven for 25-30 minutes or until they are tender and golden brown, tossing halfway through for even cooking.

        Cook the Chicken: While the sweet potatoes are baking, heat a grill pan or regular skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has a nice glaze from the BBQ sauce. Remove from the heat and let it rest for a few minutes before slicing.

          Warm the Corn and Black Beans: In a small saucepan over medium heat, combine the corn and black beans. Stir occasionally until heated through, about 4-5 minutes.
