Ingredients

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 teaspoon Dijon mustard

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

1 tablespoon Worcestershire sauce

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: Begin by boiling a large pot of salted water. Cook the egg noodles according to package instructions until al dente, then drain and set aside.

Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the sliced beef sirloin in batches, cooking until browned on all sides (about 3-4 minutes). Remove the beef from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the chopped onion and cook for about 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking until the mushrooms have released their moisture and are tender (another 4-5 minutes).

Make the Sauce: Sprinkle the flour over the mushroom mixture and stir well. Cook for an additional minute before gradually whisking in the beef broth. Bring to a gentle simmer, stirring frequently until the sauce thickens (about 3-4 minutes).

Combine Everything: Stir in the Dijon mustard, Worcestershire sauce, and sour cream, mixing well. Add the cooked beef back into the skillet and heat through (about 2 minutes). Season with salt and pepper to taste.

Serve: To serve, place a generous portion of egg noodles on each plate and spoon the beef stroganoff mixture over the top. Garnish with freshly chopped parsley for a touch of color and flavor.
