One of my absolute favorite ways to enjoy them is in this Easy Cheesy Sweet Potato Casserole. Easy Cheesy Sweet Potato Casserole: Warm Family Dinner

Ingredients
  

4 medium sweet potatoes

1 cup shredded sharp cheddar cheese

1/2 cup milk

1/4 cup unsalted butter (melted)

1/4 cup brown sugar

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup mini marshmallows (optional)

1/4 cup chopped pecans (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Peel the sweet potatoes and cut them into large chunks. Place them into a large pot and cover with water. Bring the pot to a boil and cook until the sweet potatoes are tender, about 15-20 minutes.

      Once cooked, drain the sweet potatoes and transfer them to a large mixing bowl.

        Mash the sweet potatoes until smooth. You can use a potato masher or a hand mixer for a creamier texture.

          Add the melted butter, milk, brown sugar, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix well until everything is combined and smooth.

            Fold in 3/4 cup of the shredded cheddar cheese, leaving some for topping later.

              Transfer the sweet potato mixture to a greased 9x13 inch baking dish, smoothing it out evenly.

                Sprinkle the remaining cheddar cheese on top of the sweet potato mixture. If you’re using mini marshmallows and chopped pecans, now’s the time to sprinkle those on top as well.

                  Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the top is slightly golden.

                    Remove from the oven and allow to cool for a few minutes before serving warm.
