Ingredients

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 large lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

2 cups cooked quinoa or rice (for serving)

Lemon wedges (for serving)

Instructions

Prep the Ingredients: Begin by prepping your ingredients. Peel and devein the shrimp, trim the asparagus, mince the garlic, and juice the lemon. Set aside.

Sauté the Asparagus: In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the asparagus pieces and sauté for about 4-5 minutes until they turn bright green and are just tender. Remove from the skillet and set aside.

Cook the Shrimp: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 30 seconds until the garlic is fragrant but not browned. Add the shrimp and cook for 2-3 minutes on each side, until they are pink and opaque.

Combine Everything: Add the sautéed asparagus back into the skillet with the shrimp. Pour in the lemon juice and zest, then season with salt and pepper. Stir everything together and cook for another minute to combine the flavors.

Serve the Bowl: Divide the cooked quinoa or rice among serving bowls, then top with the lemon garlic shrimp and asparagus mixture. Sprinkle with fresh parsley and serve with lemon wedges on the side for an extra zing.
