Easy Veggie and Black Bean Tacos

1 can (15 oz) black beans, rinsed and drained

1 medium zucchini, diced

1 red bell pepper, diced

1 small red onion, finely chopped

1 cup corn kernels (fresh, frozen, or canned)

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt and pepper, to taste

1 tbsp olive oil

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: avocado slices, salsa, sour cream, cheese

Instructions
 

Prep the Veggies: Start by washing and dicing the zucchini, red bell pepper, and onion. Mince the garlic and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant.

      Add Remaining Veggies: Stir in the diced zucchini, red bell pepper, and corn. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

        Season the Mixture: Add the black beans to the skillet along with the ground cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine and let cook for another 5 minutes to warm the beans through and meld the flavors.

          Warm the Tortillas: While the filling is cooking, warm the tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side, or wrap them in foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes.

            Assemble the Tacos: Take a warm tortilla and fill it with the black bean and veggie mixture. Add desired toppings like fresh cilantro, avocado slices, and a squeeze of lime.
