Ingredients

2 medium zucchini, grated (about 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup grated Parmesan cheese

2 large eggs

1/4 cup fresh parsley, finely chopped

2 garlic cloves, minced

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional, for a bit of heat)

Oil for frying (such as olive oil or vegetable oil)

Instructions

Prep the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with 1 teaspoon of salt and let it sit for about 10-15 minutes to draw out excess moisture. Afterward, twist the towel or cloth tightly to squeeze out as much liquid as possible. This step is crucial for achieving crispy fritters!

Mix Ingredients: In a mixing bowl, combine the drained zucchini, all-purpose flour, grated Parmesan cheese, eggs, parsley, minced garlic, black pepper, onion powder, and cayenne pepper if using. Stir the mixture well until all ingredients are evenly combined and form a thick batter.

Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You want the oil hot enough that a small drop of batter sizzles when added to the pan.

Form Fritters: Using a tablespoon or small ice cream scoop, drop heaping spoonfuls of the zucchini batter into the hot oil, flattening them slightly with the back of the spoon to create even fritters. Be sure not to overcrowd the pan.

Fry to Perfection: Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.

Drain and Serve: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil. Serve them warm, garnished with extra parsley, even a sprinkle of Parmesan, and your favorite dipping sauce (like tzatziki or marinara).
