Golden Fried Zucchini Chips

2 medium zucchinis

1 cup all-purpose flour

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 large egg

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese (optional for extra flavor)

Vegetable oil for frying

Fresh parsley (for garnish, optional)

Instructions
 

Prepare the Zucchini: Wash the zucchinis and cut them into thin rounds, about 1/4 inch thick. Place them on a paper towel and sprinkle a little salt over them. Let them sit for about 15 minutes to draw out excess moisture, then pat dry with another paper towel.

    Set Up Breading Station: In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and onion powder. In a second bowl, whisk the egg until well-beaten. In a third bowl, mix the breadcrumbs and Parmesan cheese if using.

      Bread the Zucchini: Take a zucchini slice and dredge it in the flour mixture, shaking off the excess. Dip it into the beaten egg, allowing the excess to drip off, and finally coat it in the breadcrumbs. Repeat this process with all the zucchini slices.

        Heat the Oil: In a large skillet or frying pan, pour in enough vegetable oil to cover the bottom by about half an inch. Heat the oil over medium-high heat until shimmering (about 350°F or 175°C).

          Fry the Chips: Carefully add the breaded zucchini slices in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove the chips with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

            Serve: Once all the zucchini chips are fried, transfer them to a serving platter. You can sprinkle some fresh parsley on top for garnish if desired. Serve immediately with your favorite dipping sauce, such as ranch, marinara, or aioli.
