1 medium onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 medium potato, cubed (optional for heartiness)

1 red bell pepper, chopped

1 zucchini, diced

1 can (14 oz) diced tomatoes, with juices

6 cups vegetable broth (or water for lighter flavor)

2 bay leaves

1 tsp cumin

1 tsp smoked paprika

1 tsp dried thyme or 2 sprigs fresh thyme

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon lemon juice (for brightness)

Fresh parsley, chopped, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the onion is translucent.

    Add Garlic and Spices: Stir in the minced garlic, cumin, smoked paprika, thyme, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
