Hearty Turkey Meatball and Spinach Soup

For the Meatballs:

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 small onion, finely diced

2 cloves garlic, minced

1 large egg

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

For the Soup:

6 cups low-sodium chicken broth

2 cups fresh spinach, roughly chopped

2 medium carrots, diced

2 stalks celery, diced

1 can (14.5 oz) diced tomatoes, undrained

1 tsp Italian seasoning

1 bay leaf

Olive oil for sautéing

Fresh parsley, chopped (for garnish)

Instructions
 

Make the Meatballs:

    - In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan cheese, diced onion, minced garlic, egg, oregano, basil, salt, and pepper. Mix until well combined.

      - Roll the mixture into small meatballs, about 1 inch in diameter. You can place them on a baking sheet lined with parchment paper.

        Cook the Meatballs:

          - In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 4-5 minutes. Remove the meatballs and set aside.

            Prepare the Soup Base:

              - In the same pot, add a bit more olive oil if needed and sauté the diced carrots and celery until they begin to soften, about 4-5 minutes.

                - Add the diced tomatoes (with their juice), Italian seasoning, bay leaf, and chicken broth. Bring to a simmer.

                  Combine Meatballs with Soup:

                    - Carefully add the browned meatballs back to the pot. Let the soup simmer for about 15-20 minutes, allowing the flavors to meld together.

                      Add the Spinach:

                        - Stir in the chopped spinach and cook for an additional 5 minutes until the spinach is wilted. Remove the bay leaf.
