1 (3-4 lb) turkey breast, bone-in and skin-on

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh sage, chopped

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon salt

1 teaspoon black pepper

1 cup low-sodium chicken broth

1 large onion, quartered

2 carrots, chopped

2 celery stalks, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make Herb Butter: In a medium bowl, combine softened butter, minced garlic, rosemary, thyme, sage, lemon zest, lemon juice, salt, and black pepper. Mix until all the herbs and seasonings are evenly incorporated into the butter.

      Prepare the Turkey: Pat the turkey breast dry with paper towels. Carefully loosen the skin from the meat using your fingers, creating a pocket.

        Apply Herb Butter: Take half of the herb butter and distribute it evenly under the skin, making sure to cover the meat adequately. Spread the remaining herb butter over the skin of the turkey breast.

          Prepare the Roasting Pan: In a large roasting pan, add the quartered onion, chopped carrots, and chopped celery. This will create a flavorful base for the turkey and enhance the drippings.

            Add Turkey to the Pan: Place the turkey breast, skin-side up, on top of the vegetables in the roasting pan. Pour the chicken broth into the bottom of the pan to help keep the turkey moist during cooking.

              Roast the Turkey: Roast the turkey breast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the breast. Baste the turkey with the pan juices every 30 minutes for added flavor and moisture.

                Rest and Serve: Once cooked, remove the turkey breast from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes before slicing to allow the juices to redistribute.
