1 large head of cauliflower, cut into florets

1 head of garlic (about 10 cloves), roasted

2 tablespoons olive oil

2 tablespoons unsalted butter (or dairy-free alternative)

1/4 cup sour cream (or Greek yogurt for a tangy twist)

1/4 cup freshly grated Parmesan cheese (optional)

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried rosemary)

Salt and pepper, to taste

Chives or parsley, for garnish

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Drizzle with a little olive oil and wrap it in aluminum foil. Roast for 30-35 minutes or until tender and caramelized. Remove from the oven, let cool slightly, and squeeze the soft cloves out of their skins.

    Cook the Cauliflower: While the garlic is roasting, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until they are fork-tender. Drain well.

      Mash the Cauliflower: In a large mixing bowl or using a food processor, add the drained cauliflower, roasted garlic cloves, olive oil, butter, sour cream, Parmesan (if using), thyme, and rosemary. Season with salt and pepper. Mash or blend until you reach your desired texture—smooth or slightly chunky.

        Adjust Consistency: If the mixture is too thick, you can add a splash of vegetable or chicken broth to achieve a creamier texture. Adjust seasoning if needed.
