1 lb boneless, skinless chicken thighs

2 cups jasmine or basmati rice

4 cups low-sodium chicken broth

1 medium yellow onion, diced

3 cloves garlic, minced

1 cup frozen mixed peas and carrots

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon garlic powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, smoked paprika, and garlic powder. Allow to marinate for 15 minutes for enhanced flavor.

    Sauté the Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Cook the Chicken: Add the seasoned chicken thighs to the pot and brown on both sides, about 4-5 minutes per side. The chicken does not need to be fully cooked at this point as it will finish cooking with the rice.

        Add Rice and Broth: Stir in the rice and pour in the chicken broth. Add the dried thyme and additional salt and pepper to taste. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Incorporate Vegetables: In the last five minutes of cooking, stir in the frozen peas and carrots, cover again, and allow to heat through.
