Ingredients

2 large flour tortillas

1 cup cooked turkey, shredded or diced

1 cup shredded cheese (cheddar or mozzarella work well)

1/4 cup cream cheese, softened

1/4 cup diced bell peppers (any color)

1/4 cup corn (fresh, frozen, or canned)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil or butter (for cooking)

Optional: Sour cream or salsa for dipping

Instructions

Prepare the Filling: In a medium mixing bowl, combine the shredded turkey, shredded cheese, cream cheese, bell peppers, corn, garlic powder, onion powder, salt, and pepper. Mix until well combined. This gives the quesadillas a creamy, flavorful filling that kids will love.

Assemble the Quesadillas: Lay one tortilla flat on a clean surface or cutting board. Spoon half of the turkey and cheese mixture onto one half of the tortilla. Fold the other half over the filling, creating a half-moon shape. Repeat with the second tortilla and remaining filling.

Cook the Quesadillas: In a large skillet, heat the olive oil or butter over medium heat. Once hot, carefully add one quesadilla to the skillet. Cook for about 3-4 minutes or until the bottom is golden brown and crispy. Gently flip and cook for another 3-4 minutes until the other side is also golden and the cheese is melted.

Finish and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges. Repeat with the second quesadilla. Serve warm with sour cream or salsa on the side for dipping.

Enjoy: Gather the kids and dive into these delicious, cheesy turkey quesadillas that are sure to be a hit at the dinner table!
