Lemon Garlic Shrimp and Broccoli Bowl

1 pound large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 lemon, zested and juiced

4 tablespoons olive oil, divided

1 teaspoon red chili flakes (optional)

Salt and pepper to taste

1 cup cooked quinoa or rice (optional, for serving)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare Broccoli: In a medium-sized pot, bring salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until they turn bright green. Remove and immediately plunge them into an ice bath to stop the cooking process. Drain and set aside.

    Marinate Shrimp: In a bowl, combine the peeled shrimp with 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, red chili flakes (if using), and a pinch of salt and pepper. Toss to coat and let this marinate for about 15 minutes.

      Cook Shrimp: In a large skillet over medium-high heat, add the remaining 2 tablespoons of olive oil. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on one side until they begin to turn pink, then flip them over and cook for another 2 minutes until fully cooked. Be careful not to overcook them.

        Combine Ingredients: Lower the heat and add the blanched broccoli to the skillet with the shrimp. Toss everything together gently to combine, allowing the broccoli to warm up and absorb the flavors for about 1 minute.

          Serve: Serve the shrimp and broccoli mixture over a bed of cooked quinoa or rice if desired. Garnish with chopped fresh parsley and serve with lemon wedges on the side for an extra zing.
