Ingredients

4 (6 oz) salmon fillets, skin-on

2 tablespoons olive oil

3 tablespoons fresh lemon juice (about 1 large lemon)

Zest of 1 lemon

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh parsley, chopped

1 teaspoon fresh thyme leaves (or 1/3 teaspoon dried thyme)

Salt and black pepper, to taste

Lemon slices, for garnish

Fresh herbs, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Make the Marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, thyme, salt, and pepper until well combined.

Prepare the Salmon: Place the salmon fillets on the prepared baking sheet, skin-side down. Pat them dry with paper towels for a nice sear.

Marinate: Drizzle the lemon herb marinade over the salmon fillets, ensuring they are well coated. Let them marinate for about 15 minutes at room temperature for optimal flavor.

Roast the Salmon: Transfer the baking sheet to the preheated oven. Roast the salmon for 12-15 minutes or until the salmon flakes easily with a fork and is cooked to your liking. The edges should be slightly crispy.

Garnish and Serve: Remove the salmon from the oven. Garnish with fresh lemon slices and additional herbs if desired. Serve hot with your favorite sides, such as roasted vegetables or a crisp salad.

Enjoy Your Meal: Plate the salmon, drizzle any remaining marinade over the top, and dig in!
