2 lbs chicken breast, cut into bite-sized pieces

2 tbsp olive oil

3 cloves garlic, minced

1 medium onion, diced

1 cup cherry tomatoes, halved

4 cups fresh spinach, packed

1 cup heavy cream

1/2 cup chicken broth

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh basil, for garnish (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the skillet, cooking until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
