One-Pan Creamy Pesto Chicken Pasta

2 boneless, skinless chicken breasts, sliced into bite-sized pieces

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

8 ounces uncooked pasta (penne or fusilli works great)

2 cups chicken broth

1 cup heavy cream

1/2 cup basil pesto

1 cup baby spinach

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Sauté the Chicken: In a large skillet or pan, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken breasts with salt and pepper. Add the chicken to the pan and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

    Cook the Aromatics: In the same pan, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes & Pasta: Add the halved cherry tomatoes to the pan and sauté for another 2-3 minutes until they begin to soften. Then, add the uncooked pasta to the pan, stirring to combine.

        Pour in Broth & Cream: Carefully pour in the chicken broth and heavy cream. Give it a good stir, making sure the pasta is submerged. Bring to a simmer, then reduce heat to low, cover, and cook for about 10 minutes or until the pasta is al dente, stirring occasionally.

          Add Pesto & Spinach: Once the pasta is cooked, stir in the basil pesto and baby spinach. Mix until the spinach is wilted and everything is well combined.

            Finish with Cheese: Stir in the grated Parmesan cheese, and return the cooked chicken to the pan. Mix everything well until creamy and heated through. Taste and adjust seasoning with salt and pepper if needed.
