Ingredients

1 lb large shrimp, peeled and deveined

4 cups broccoli florets

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

Zest and juice of 2 lemons

Salt and pepper, to taste

1/4 cup freshly chopped parsley, for garnish

Optional: 1/2 teaspoon smoked paprika for extra flavor

Cooked rice or quinoa, for serving (optional)

Instructions

Prep the Shrimp: In a bowl, combine the shrimp, lemon juice, lemon zest, minced garlic, red pepper flakes, salt, pepper, and smoked paprika (if using). Toss to coat the shrimp evenly and let marinate for about 15 minutes.

Sauté Broccoli: In a large skillet or pan over medium heat, add 2 tablespoons of olive oil. Once hot, add the broccoli florets and sauté for about 3-4 minutes until they are bright green and tender-crisp. Remove the broccoli from the pan and set aside.

Cook Shrimp: In the same pan, add the remaining 2 tablespoons of olive oil. Increase the heat to medium-high. Once the oil is shimmering, add the marinated shrimp to the pan in a single layer. Cook for about 2-3 minutes on one side until pink and opaque, then flip and cook for an additional 1-2 minutes on the other side.

Combine and Finish: Return the sautéed broccoli to the pan with the shrimp. Toss everything together until the broccoli is heated through, and the shrimp are cooked perfectly. Adjust seasoning with extra salt, pepper, or lemon juice as needed.

Serve: Remove from heat and sprinkle freshly chopped parsley on top. Serve immediately over cooked rice or quinoa, if desired.
