Ingredients

4 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (or milk alternative)

1 tablespoon olive oil or butter

1/4 teaspoon ground black pepper

1/4 teaspoon salt

1/4 teaspoon garlic powder (optional)

Fresh herbs (like dill or parsley) for garnish

Instructions

Prep the Ingredients: Begin by washing and chopping the fresh spinach. Crumble the feta cheese and set aside.

Whisk the Eggs: In a large mixing bowl, crack the 4 eggs and add the milk, black pepper, salt, and garlic powder (if using). Whisk together until well combined and fluffy.

Sauté the Spinach: In a non-stick skillet, heat the olive oil or butter over medium heat. Add the chopped spinach and sauté for about 1-2 minutes until wilted.

Combine: Pour the egg mixture over the sautéed spinach in the skillet. Use a spatula to gently spread the spinach evenly throughout the eggs.

Add Feta: As the omelet starts to set (about 1-2 minutes), sprinkle the crumbled feta cheese on top.

Cook: Allow the omelet to cook undisturbed for about 3-4 more minutes, or until the edges are fully cooked and the center is slightly jiggly.

Flip (if desired): For a fully cooked omelet, you can fold it in half using a spatula or carefully flip it over using a plate. Cook for an additional minute on the other side.

Serve: Once cooked to your liking, carefully slide the omelet onto a plate. Garnish with fresh herbs and serve immediately.
