1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (your choice of flavor)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4 flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup coleslaw mix (cabbage & carrots)

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper. Add the chicken to the skillet and sear for about 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F).

    Shred the Chicken: Transfer the cooked chicken breasts to a large bowl and shred using two forks. Mix in 1 cup of BBQ sauce until the chicken is well-coated. Set aside.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Assemble the Flatbreads: On a baking sheet, lay out the flatbreads. Evenly distribute the pulled BBQ chicken mixture over each flatbread. Sprinkle shredded mozzarella cheese on top of the chicken.

          Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

            Make the Coleslaw: In a medium bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, honey, salt, and pepper. Toss until the coleslaw is evenly coated.
