2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 cup hot water

Optional Topping:

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round springform cake pan or line it with parchment paper for easy removal.

Prepare the Pumpkin Batter: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, and granulated sugar. Beat in the eggs one at a time, then add the vanilla extract. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Set aside.

Prepare the Chocolate Batter: In a separate bowl, combine the flour, cocoa powder, sugar, and salt. Add the vegetable oil, eggs, and vanilla extract. Mix until well incorporated. Gradually stir in the hot water until the batter is smooth.

Assemble the Marble Cake: Pour spoonfuls of the pumpkin batter into the prepared cake pan, followed by spoonfuls of the chocolate batter. Use a knife or skewer to gently swirl the batter together, creating a marbled effect. Avoid overmixing.

Bake the Cake: Place the cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the cake to prevent overbaking.

Cool and Remove: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serve and Decorate: Once cooled, dust the top with powdered sugar and sprinkle with chopped pecans or walnuts if desired. Slice and serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra indulgent treat!
