Pumpkin Custard

2 cups pumpkin puree (fresh or canned)

1 cup heavy cream

1/2 cup whole milk

3/4 cup brown sugar

3 large eggs

1 teaspoon pure vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Whipped cream (for serving, optional)

Crushed pecans or walnuts (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Mix the Pumpkin Base: In a large mixing bowl, combine the pumpkin puree, heavy cream, whole milk, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt. Whisk thoroughly until the mixture is smooth and well blended.

      Prepare the Custard Dishes: Lightly grease six ramekins with cooking spray or butter to prevent sticking. Place the ramekins in a large baking dish.

        Fill the Ramekins: Carefully pour the pumpkin mixture into each ramekin, filling them about three-quarters full.

          Create a Water Bath: Pour hot water into the baking dish, enough to reach halfway up the sides of the ramekins. This will help the custard cook evenly.

            Bake the Custard: Place the baking dish with the ramekins in the preheated oven and bake for 35–40 minutes, or until the custards are set and a toothpick inserted into the center comes out clean.

              Cool Down: Once the custards are cooked, remove them from the water bath and allow them to cool at room temperature for about 15 minutes. Then, cover and refrigerate for at least 2 hours to chill completely.

                Serve: To serve, top each custard with a dollop of whipped cream and a sprinkle of crushed pecans or walnuts, if desired. Enjoy the creamy goodness!
