1 lb (450g) ground beef

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

¼ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 cups beef broth

2 tablespoons olive oil

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (optional, for serving)

Instructions
 

Heat the Olive Oil:

    In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for 3-4 minutes until it becomes translucent.

      Cook the Ground Beef:

        Add the ground beef to the pot with the onions. Cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if necessary.
