Quick Beef Stir-Fry with Broccoli and Rice

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced

2 cups broccoli florets

1 cup bell peppers (red and yellow), sliced

2 cloves garlic, minced

2 tablespoons fresh ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tablespoons oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

3 cups cooked rice (white or brown)

2 green onions, finely chopped

Sesame seeds for garnish (optional)

Instructions
 

Prepare the Rice: If you haven't prepped your rice, cook 1 cup of uncooked rice according to package instructions. Set aside and keep warm.

    Marinate the Beef: In a bowl, combine the sliced beef sirloin, 2 tablespoons of soy sauce, 1 tablespoon of cornstarch slurry, and half of the minced garlic. Let it marinate for about 10 minutes for deeper flavor.

      Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Cook the Beef: Add the marinated beef to the hot skillet in a single layer. Stir-fry for about 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set it aside.

          Stir-Fry Vegetables: In the same skillet, add a bit more vegetable oil if needed. Add the remaining garlic, grated ginger, broccoli florets, and bell peppers. Stir-fry for about 3-4 minutes or until the broccoli is bright green and slightly tender but still crisp.

            Combine Ingredients: Return the beef to the skillet with the vegetables. Pour in the remaining soy sauce, oyster sauce, and sesame oil. Toss everything together to coat.

              Thicken Sauce: Stir in the cornstarch and water slurry to the skillet. Cook for an additional 1-2 minutes until the sauce thickens and everything is well combined.

                Serve: Plate the cooked rice and spoon the beef and broccoli stir-fry over the top. Garnish with chopped green onions and sprinkle with sesame seeds if using.
