Quick & Healthy Air Fryer Pumpkin Spice Falafel Bites

Ingredients
  

1 cup canned pumpkin puree

1 cup cooked chickpeas (drained and rinsed)

1/2 cup breadcrumbs (whole wheat or gluten-free)

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1 tsp pumpkin spice blend

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (for brushing)

Optional: Greek yogurt or tahini for dipping

Instructions
 

In a large mixing bowl, combine the canned pumpkin puree, cooked chickpeas, breadcrumbs, chopped parsley, and minced garlic.

    Add the ground cumin, ground coriander, pumpkin spice blend, salt, and black pepper to the bowl. Mix everything together until well combined. If necessary, use a potato masher or fork to mash the chickpeas slightly for a better texture.

      Preheat the air fryer to 375°F (190°C) for about 5 minutes.

        Once the mixture is combined, use your hands to shape the mixture into small balls or patties, about 1-2 inches in diameter.

          Lightly brush each falafel bite with olive oil on all sides.

            Place the falafel bites in the air fryer basket, making sure they are not overcrowded. You may need to cook them in batches.

              Air fry the falafel bites for about 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

                Once cooked, remove the falafel bites from the air fryer and let them cool for a minute before serving.

                  Serve warm with your favorite dipping sauce like Greek yogurt or tahini, and enjoy your cozy pumpkin spice falafel!
