8 oz penne pasta

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 (15 oz) can diced tomatoes, undrained

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1 cup salsa (choose your spice level!)

½ cup sour cream

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Turkey: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional minute.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

        Season and Combine: Stir in the taco seasoning, diced tomatoes (with juice), corn, and black beans. Mix everything together and let it simmer for 3-5 minutes to allow the flavors to meld.

          Mix with Pasta: In a large mixing bowl, combine the cooked pasta, turkey mixture, salsa, and half of the shredded cheddar cheese. Gently fold until the pasta is thoroughly coated.

            Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the pasta mixture into a greased 9x13 inch baking dish. Spread evenly.

              Bake: Top the pasta with the remaining cheddar cheese, then bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

                Serve and Garnish: Remove from the oven and let it cool for a few minutes. Serve warm, garnished with sliced green onions and chopped cilantro. Add a dollop of sour cream on each serving for extra creaminess!
