Roasted Garlic Mashed Cauliflower

Ingredients
  

1 large head of cauliflower, cut into florets

1 whole head of garlic

3 tablespoons olive oil

1/4 cup unsalted butter (or vegan butter for a dairy-free option)

1/2 cup heavy cream (or unsweetened almond milk for a lighter version)

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Place the whole head of garlic on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap tightly in the foil. Set aside.

      On a baking sheet, toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper until well-coated.

        Place the wrapped garlic and the baking sheet with cauliflower in the oven. Roast for 25-30 minutes, or until the cauliflower is tender and the garlic is soft and caramelized.

          Once done, remove the baking sheet and garlic from the oven. Allow the garlic to cool slightly before squeezing the cloves out of their skins into a mixing bowl.

            Add the roasted cauliflower florets to the bowl with the garlic. Pour in the cream (or almond milk) and add the butter. Mash everything together using a potato masher or a hand mixer until you reach your desired consistency—smooth or slightly chunky, depending on your preference.

              Season with additional salt and pepper to taste. Mix well until all ingredients are combined.

                Transfer the mashed cauliflower to a serving bowl and garnish with chopped chives or parsley if desired. Serve warm.
