4 large bell peppers (any color)

1 lb ground beef (or ground turkey for a leaner option)

1 cup cooked rice (white or brown)

1 cup diced tomatoes (canned or fresh)

1 medium onion, diced

2 cloves garlic, minced

1 cup corn kernels (canned or frozen)

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar, mozzarella, or a blend)

Fresh parsley, chopped (for garnish)

Olive oil for sautéing

Prepare the Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and arrange them in a baking dish.

    Cook the Filling: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add the Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

        Combine Ingredients: To the beef mixture, add cooked rice, diced tomatoes, corn, oregano, cumin, smoked paprika, salt, and pepper. Stir everything together and let it simmer for about 5 minutes to meld the flavors. Remove from heat and mix in half of the shredded cheese.

          Stuff the Peppers: Carefully spoon the beef and vegetable mixture into each bell pepper, packing it tightly. Place the filled peppers upright in the baking dish.

            Top with Cheese: Sprinkle the remaining shredded cheese over the stuffed peppers.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the peppers are tender and the cheese is bubbly and golden.
