3 cloves of garlic, minced

4 cups vegetable broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated

2 tablespoons unsalted butter

1 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup chopped green onions (for garnish)

Fresh parsley, chopped (for garnish)

Sauté Aromatics: In a large pot over medium heat, melt the butter. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

    Cook Potatoes: Add the diced potatoes to the pot and stir for a few minutes. Pour in the vegetable broth, ensuring the potatoes are fully submerged. Bring to a boil, then lower the heat to a simmer. Cover and cook for approximately 15-20 minutes, or until the potatoes are tender.

      Blend the Mixture: Once the potatoes are cooked, use an immersion blender to puree the soup to your desired consistency. For a chunkier option, blend only half and leave the rest as is.

        Add Cream and Cheese: Stir in the heavy cream and add the smoked paprika. Gradually mix in the grated cheddar cheese, ensuring it melts well into the soup. Season with salt and pepper to taste.
