Savory Chicken Alfredo Pasta with Broccoli

8 ounces fettuccine or your preferred pasta

2 boneless, skinless chicken breasts

2 cups broccoli florets

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Add the broccoli florets to the boiling pasta for the last 3 minutes of cooking. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned chicken breasts and sauté until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest for a few minutes before slicing into thin strips.

        Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Pour in the heavy cream and bring to a gentle simmer.

          Add Cheese and Combine: Stir in the grated Parmesan cheese until melted and combined, creating a creamy sauce. Season with additional salt and pepper to taste. If the sauce seems too thick, you can add a splash of reserved pasta water to achieve the desired consistency.

            Combine Everything: Add the drained pasta and broccoli to the skillet, tossing gently to coat everything with the Alfredo sauce. Add the sliced chicken on top and mix gently to combine.
