2 cups cooked chicken, shredded or diced

1 cup long-grain white rice, uncooked

3 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 cup broccoli florets (fresh or frozen)

1 cup carrots, diced

1 cup frozen peas

1 cup cheddar cheese, shredded

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Sauté vegetables: In a large skillet, heat the olive oil and butter over medium heat. Add the diced onion and garlic, sautéing for about 3-4 minutes until translucent.

      Add vegetables: Stir in the diced carrots and broccoli florets, cooking for an additional 5 minutes until slightly tender.

        Combine ingredients: In a large mixing bowl, combine the cooked chicken, uncooked rice, sautéed vegetables, frozen peas, dried thyme, paprika, and salt and pepper.

          Prepare the casserole: Pour the mixture into a greased 9x13 inch baking dish. Slowly pour the chicken broth over the top, making sure the rice is fully submerged.

            Add cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes or until the rice is fully cooked and the cheese is bubbly and golden brown.

                Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired. Serve warm and enjoy your savory delight!
