Ingredients

4 boneless, skinless chicken breasts

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

2 tablespoons olive oil

8 ounces cremini or button mushrooms, sliced

1 cup Marsala wine

1 cup chicken broth

3 cloves garlic, minced

2 tablespoons fresh parsley, chopped (for garnish)

1/2 teaspoon dried thyme

1 tablespoon unsalted butter

Instructions

Preparation of Chicken:

    - Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, and garlic powder.

      Searing the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts.

          - Cook for about 5-6 minutes on each side, or until they are golden brown and cooked through. Remove from skillet and set aside.

            Cooking the Mushrooms:

              - In the same skillet, add sliced mushrooms. Sauté for 4-5 minutes until they start to soften.

                - Add minced garlic and dried thyme, and cook for an additional minute until fragrant.

                  Creating the Sauce:

                    - Pour in the Marsala wine, stirring to deglaze the pan, scraping up any browned bits. Simmer for about 5 minutes until the wine reduces slightly.

                      - Add the chicken broth and bring the mixture to a gentle simmer.

                        Finishing Touches:

                          - Return the seared chicken breasts back to the skillet and let them simmer in the sauce for an additional 5-7 minutes, allowing the flavors to meld.

                            - Stir in the butter for a silky finish, and adjust seasoning with more salt and pepper if desired.

                              Garnishing and Serving:

                                - Remove from heat and sprinkle with fresh parsley before serving. Pairs beautifully with garlic mashed potatoes or a bed of creamy polenta.
